Peanut Butter Cookie |

1/2 cup shortening (½ butter or margarine) |

Heat oven to 375º. Mix shortening, peanut butter, sugars and egg thoroughly. Blend all dry ingredients and stir into shortening mixture. Roll dough into 1 ¼” balls. Place 2” apart on a cookie sheet lined with parchment paper. Flatten slightly in a crisscross pattern with tines of fork dipped in flour. Bake for 10-12 minutes. Makes 3 dozen. |
