Peanut Butter Oatmeal Cookie |

1/2 cup shortening |

Heat oven to 350º. In a mixing bowl, cream shortening and peanut butter. Add brown sugar, eggs and vanilla. Mix well. Combine oats, flour, salt and baking soda, add to creamed mixture and mix well. Drop by heaping teaspoon 2” apart on a cookie sheet lined with parchment paper. Flatten slightly in a crisscross pattern with tines of fork. Bake for 12 minutes. Makes 6 dozen. |
