Oatmeal Pecan Cookies |

1 cup shortening |
1 1/2 cups flour |

Cream shortening and sugars. Add eggs and vanilla. Combine flour, baking soda and salt. Gradually add to creamed mixture. Stir in oats and nuts. Chill for 30 minutes. Shape into 1 ½” balls. Bake at 350º for 10-12 minutes in a preheated oven or until golden brown on parchment lined cookie sheet. Cool on wire racks. |
