1/2 cup butter or margarine, softened |

3/4 cups all purpose flour |

Cream butter; gradually add 1 cup sugar, beating well at medium speed of electric mixer. Add egg, vanilla and lemon rind; beat well. Combine flour, soda and salt in a medium bowl; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Cover dough and refrigerate at least 2 hours. Roll dough to 1/4” thickness on a lightly floured surface. Cut with 2” cookie cutter. Sprinkle with sugar. Bake 6-8 minutes or until edges are lightly brown in preheated oven at 375º on a cookie sheet lined with parchment paper. Makes 3 1/2 dozen |
